Satay Rice with Stir Fried Greens

Originated from Java, Indonesia, Satay (pronounced sah-tay) was supposedly invented by the street vendors as an adaptation of Indian kebabs. It is essentially meat or vegetables skewered on bamboo sticks and served with a peanut sauce. Introduced from Mexico by Portuguese and Spanish merchants in the 16th century, peanuts found a place in Indonesian cuisine. Here, we flavor the rice with all the essential ingredients that go into the peanut sauce and accompany it with simple and delicious greens
