Paneer Balchao with Brown Rice

A classic of the cuisine of Goa, balchao gravy is a blend of various ingredients almost resembling a pickle. Dry red chillies and vinegar make the base of the paste which gives it its fiery red colour. This dish was popularized in the kitchens of Goa by catholic Portuguese during colonization. Balchao originated in Macao (also once a Portuguese colony), where it is called Balichao. Its best served with boiled rice. We have given a healthy twist by serving it with brown rice.
